- Place the shallots in a cold medium-sized saucepot and add just enough vegetable oil to completely submerge the shallots. Set over medium heat and slowly bring to a gentle simmer, stirring constantly. Continue to cook and stir until the bubbling subsides and the shallots are light golden brown, about 5-8 minutes.
- Using a spider or fine-mesh strainer, drain briefly over the pot then immediately transfer the shallots to a paper towel-lined baking sheet. Spread the shallots out in a single layer to prevent them from becoming soggy. Season to taste with salt while still hot.
- Let cool completely at room temperature before serving. Store in an airtight container at room temperature for 1-2 days.
