Perfectly Crispy Fried Shallots

Ingredients

  • 4 medium shallots, peeled and sliced into ¼” (.6cm) thick rounds
  • Vegetable oil, for frying 
  • Kosher salt, to taste

Directions

  1. Place the shallots in a cold medium-sized saucepot and add just enough vegetable oil to completely submerge the shallots. Set over medium heat and slowly bring to a gentle simmer, stirring constantly. Continue to cook and stir until the bubbling subsides and the shallots are light golden brown, about 5-8 minutes.
  2. Using a spider or fine-mesh strainer, drain briefly over the pot then immediately transfer the shallots to a paper towel-lined baking sheet. Spread the shallots out in a single layer to prevent them from becoming soggy. Season to taste with salt while still hot. 
  3. Let cool completely at room temperature before serving. Store in an airtight container at room temperature for 1-2 days.
