Colombian Salt Crusted Potatoes

Ingredients

  • 2 lbs (900g) small new potatoes, rinsed
  • ½ cup (120g) kosher salt 

Directions

  1. Place potatoes in a medium sauce pot, and cover with water. Bring the water to a boil over high heat. While the water is coming to a boil add salt and stir to dissolve.
  2. Once the water comes to a boil, reduce the heat to a simmer, and cook the potatoes until all of the liquid has evaporated, about 5 minutes.
  3. Let the potatoes rest in the pot for about 5 minutes, then toss in the pan and serve.
