- 1 cup (240mL) white distilled vinegar
- ½ cup (120mL) water
- 2 Tbsp (25g) granulated sugar

- 1 tsp (2g) coriander seeds
- 1 tsp (2g) black peppercorns
- 2 cloves garlic, peeled and lightly crushed
- 3 larges sprigs dill
Smash Burger
Homemade Burger Sauce:
- ¾ cup (180g) mayonnaise
- ⅓ cup (80g) yellow mustard
- ⅓ cup (80g) ketchup
- 2 Tbsp (6g) chives, very thinly sliced
- 1 tsp (4g) granulated sugar
- 1 Tbsp (15mL) worcestershire sauce
- Pinch of MSG
- 2 cloves garlic, grated
- Kosher salt and freshly cracked black pepper, to taste

- 1 lb (454g) ground beef (75-80% lean), divided into 8x 2 oz (57g) balls
- Kosher salt and freshly cracked black pepper, to taste
- 8 slices American cheese
- ½ white onion, very thinly sliced
- 4 potato or milk burger buns (find my recipe), toasted
- Unsalted butter, for toasting buns

Thick and Juicy Burger
Burger + Assembly:
- 1.5 lbs (681g) ground beef (75-80% lean), divided into 4x 6 oz (171g) patties
- Kosher salt and freshly cracked black pepper, to taste
- Neutral cooking oil (vegetable, avocado, etc.), for searing
- ¼ cup (56g) unsalted butter, plus more for bun toasting
- ½ bunch thyme
- 4 slices American cheese
- 4 large seeded buns (Big Marty’s or homemade sesame seeded buns)
- Mayonnaise, to taste
- Yellow mustard, to taste
- 1 red onion, cut into ¼” (.6 cm) rings
- 1 large heirloom tomato, ¼” (.6 cm) thick slices
- Flakey salt, to taste
