- 3 Tbsp (38g) granulated sugar
- 2 tsp (8g) vanilla bean paste

- ½ cup (120mL) water
- 3 envelopes (22g) unflavored powdered gelatin
- 1.5 cups (300g) granulated sugar
- 1.25 cups (385g) light corn syrup
- ½ cup (120ml) water
- Small pinch of kosher salt
- 2 tsp (5g) vanilla extract
- 1:1 mix of potato starch and powdered sugar, *see notes*

- 1 cup (100g) unsweetened cocoa powder
- 1 cup (120g) powdered sugar
- ¼ cup (50g) light brown sugar
- ½ tsp (~2g) fine sea salt
- Whole milk, for making the hot cocoa (¼ cup of dry mix per 1 cup of milk)
My Favorite Hot Chocolate:
- 3.5 cups (840mL) whole milk
- ¼ cup (60mL) heavy whipping cream
- ¼ cup (50g) granulated sugar
- ½ tsp (~2g) fine sea salt
- 1 tsp (5g) vanilla bean paste, or vanilla extract *optional*
- 1 lb (454g) 60-70% dark chocolate, finely chopped
- Whipped cream, for topping
