Ingredients

Immersion Blender Mayo:

Ingredients:

  • 2 egg yolks
  • 1 Tbsp (15g) Dijon mustard
  • 1 Tbsp (15mL) lemon juice
  • 1 Tbsp (15mL) water
  • ¾ cup (180mL) neutral oil
  • Kosher salt, to taste

Mayo by Hand:

Ingredients:

  • 2 egg yolks
  • 1 Tbsp (15g) Dijon mustard
  • 1 cup (240mL) neutral oil
  • Kosher salt, to taste

Directions:

  1. To a pint-sized mason jar, add the egg yolks, Dijon, lemon juice, water, and oil. Season to taste with salt then insert an immersion blender all the way to the bottom of the jar. Begin blending on high as you slowly raise the head of the blender to incorporate all of the oil. Incorporate until smooth and homogenous. Serve and enjoy!

Mayo by Hand:

Directions:

  1. Stabilize a medium-sized mixing bowl by placing it on top of a damp towel. Add the egg yolks and Dijon then whisk together until homogenous and slightly paler in color. At this stage, continuously whisk as you drop in the oil a little bit at a time. Continue until all of the oil has been incorporated. Season to taste with salt. Serve and enjoy!
