The Sandwich:

  • 4 Bolillo rolls, split lengthwise
  • ½ medium yellow onion, roughly diced
  • Kosher salt, to taste
  • 12 oz (340g) Boar’s Head London Broil Roast Beef, very thinly sliced
  • ½ cup (110g) low-fat cottage cheese, blended *See Notes*
  • 8 slices Jarlsberg Lite Swiss Cheese

Directions

  1. In a large skillet or griddle set over medium heat, toast the Bolillo roll cut-side down without the addition of any fat until lightly golden and warmed through. Reserve until assembly.
  2. Lightly spray the pan with cooking spray and add a ¼ of the diced onions. Season with salt and cook, stirring occasionally, until lightly browned, about 2-3 minutes. Add 3 oz of the roast beef over the onions and toss together to combine. Cover with 2 tablespoons of the blended cottage cheese then mix until evenly coated and creamy. Top with 2 slices of Jarlsberg, cut off the heat, and let it melt. Using a large spatula, scoop the mixture onto the Bolillo roll, then crown your king.
  3. Repeat with the rest of the ingredients. Serve and enjoy!

*Notes*:

  • For the cottage cheese: simply blend in a food processor, or with a hand blender. You can omit this but it helps make the final product extra cheesy.
