- Combine blackberries and sugar in a medium saucepan. Smash the berries using your hands or a fork to break them down and macerate them with the sugar.
- Add the water and bring to a boil over medium-high heat. Reduce to a simmer and cook for 15-20 minutes or until the liquid is reduced and thickened, stirring occasionally. You can check the thickness by pouring about 1 teaspoon, or 4 grams, on a small plate, and placing it in the fridge for 1 minute. If after one minute it forms a sticky string when rubbed between two fingers, it’s done.
- Once the jam has thickened, stir in the lemon juice to taste. Pass the jam through a fine-mesh strainer and let it cool completely. Serve and enjoy.
