Spicy Yuzu Apple Jam

Spicy Yuzu Apple Jam

Ingredients

  • 4 lbs (1.8kg) Fuji apples, peeled and cut into ½-inch chunks
  • 2 cups (420g) granulated sugar
  • 3 Thai chilies, finely chopped
  • ½ cup (120ml) water
  • 3 Tbsp (35g) yuzu juice

Directions

  1. Place apples in a large saucepan and stir in the sugar until combined. Let macerate for 10 minutes.
  2. Stir in the chilies, water and yuzu juice and place the saucepan over medium high heat. Bring the mixture to a boil.
  3. Once at a boil, reduce to a simmer and cook, stirring often, until the apples are translucent and glossy and the liquid has thickened into a syrup.
  4. Cool completely and serve in a bowl.
