Navajo Fry Bread Burger

Ingredients

Burger:

  • 6 oz (170g) 75/25 ground beef
  • 1 tsp (3g) black pepper
  • 1 tsp (3g) kosher salt
  • ¼ cup (35g) tomato, diced
  • ¼ cup (34g) shredded lettuce
  • 1 slice American cheese

Bread:

  • 2 cups (328g) all-purpose flour
  • ½ Tbsp (3g)  baking powder
  • 1 tsp (3g) kosher salt
  • 1 cup (125ml) hot water
  • 2 quarts (2L) vegetable oil

Burger Sauce:

  • ½ cup (145g) ketchup
  • ½ cup (145g) mustard
  • ¾  cup (217g) mayonnaise
  • 2 tsp (30g) Worcestershire
  • Kosher salt to taste
  • Pepper to taste

Directions

Bread:

  1. In a large mixing bowl, combine the flour, baking powder, and salt.
  2. Gradually add the hot water to the dry ingredients, stirring continuously until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until it becomes smooth and elastic.
  4. Divide the dough into 8 equal portions and shape each portion into a ball.
  5. Heat the vegetable oil in a deep pot or fryer over medium-high heat until it reaches a temperature of 375°F.
  6. Flatten each ball of dough into a disk, about 1/4 inch thick.

Burger:

  1. Preheat vegetable oil to 350°F in a heavy bottomed pot.
  2. Preheat a large pan over medium high heat.
  3. Weigh your portion of ground beef and shape into a patty. Season both sides of the patty with salt and pepper.
  4. Place patty in the pan and cook for 3-4 minutes per side. Set to drain over a paper towel until slightly cool.
  5. Wrap the burger in dough with a slice of cheese and fry for 2-3 minutes or until golden brown.
  6. Use a slotted spoon to remove the fry bread from the oil and transfer it to a plate lined with paper towels to remove excess oil.

Burger Sauce:

  1. In a small bowl combine all ingredients. Use a whisk to mix thoroughly.

Assembly:

  1. Cut the burger in half and open the pouch.
  2. Add diced tomatoes, shredded lettuce, and burger sauce.
