Ingredients

  • 10 spring roll wrappers
  • 10 mozzarella string cheese sticks, frozen for 1-2 hours
  • Water, to seal the wrappers around the cheese sticks
  • 2 quarts (2L) vegetable oil

Directions

  1. Begin by preheating your oil in a heavy bottomed pot or Dutch oven to 350°F (176°C).
  2. While the oil is heating, unwrap the spring roll wrappers and cover with a damp towel to keep them from drying out. Lay one wrapper in front of you like a diamond. Place the cheese stick on the bottom third of the wrapper, fold in the sides and then roll tightly. Right before the final roll, take your finger and dip in water and run it over the last edge before finishing the wrapping. This will help the wrapper stay sealed.
  3. Once you have all 10 cheese sticks wrapped, gently drop each stick into your hot oil in batches, being careful not to overcrowd.  Use a spider to flip each stick so all sides are fried.  Fry for 3-4 minutes or until golden brown, and transfer the fried cheese sticks to a wire rack-lined baking tray. Season with salt.
