Ingredients

Chicken Farce:

  • 1 lb (450g) chicken breast
  • ¼ pound (115g) chicken skin
  • 2 tsp (8g) kosher salt
  • 1 tsp (4g) granulated sugar
  • 3/4 tsp (4g) MSG
  • 1 tsp (2g) ground white pepper
  • 2 tsp (6g) garlic powder

Breading:

  • 1 cup (120g) all-purpose flour
  • 2 tsp (8g) kosher salt
  • 1 tsp (5g) MSG
  • 2 tsp (6g) garlic powder
  • 2 tsp (6g) Spanish paprika
  • 2 eggs, beaten
  • 1 Tbsp (15g) water
  • 1 cup (75g) panko bread crumbs

Directions

  1. Start by slicing the chicken breasts into long strips and place into a bowl with chopped chicken skin.
  2. Add garlic powder, MSG, kosher salt, ground white pepper, and granulated sugar. Toss together to fully incorporate all ingredients.
  3. Using a meat grinder or a grinding attachment for a Kitchenaid stand mixer, grind your spiced chicken mixture into a medium sized mixing bowl.
  4. With damp hands, form the ground chicken into the form of a french fry. Repeat. Place on a parchment lined baking sheet.
  5. Place chicken fries into a freezer for 15 minutes.
  6. Add all-purpose flour, garlic powder, MSG, paprika, and kosher salt to a bowl. Add eggs beaten with water to a separate bowl, and panko breadcrumbs to the third bowl. Evenly coat fries in seasoned flour, then coat in egg wash, then fully coat in breadcrumbs. Transfer breaded chicken fries to a parchment-lined baking sheet.
  7. Place breaded fries into the freezer for 15 minutes.
  8. In a heavy bottomed pot, heat frying oil to 350°F and fry the chicken in batches for 3-4 minutes. Transfer cooked chicken to a wire rack-lined baking sheet.
