The time has come... we are going to make a mcflurry completely from scratch. A recipe many thoughts was impossible, is now possible and it's shockingly easy to make. And no, the machine is not down today, and it never will be again.
ITEMS USED:
INGREDIENTS:
Soft Serve:
1 cup (212g) sugar
2 cups (480ml) whole milk
2.5 tsp (4g) vanilla extract or vanilla bean
3 egg yolks
2 cups (480ml) heavy cream
Waffle cone:
2 egg whites
1/4 cup (60ml) heavy cream
1/2 cup (113g) sugar
1/2 tsp (2g) salt
2 tsp (4g) vanilla extract
1/4 cup (56g) unsalted butter
2/3 cup (100g) all-purpose flour
Caramel:
1 cup (212g) sugar
5 Tbsp (73g) butter
1/2 cup heavy cream
1 tsp (7g) fine sea salt
INSTRUCTIONS:
Method:
In a medium saucepan, add granulated sugar and whole milk. Bring up to heat over low heat. Stir until just before simmering. No boiling. Should be 170F.
Split vanilla beans open and using a knife scrape all the beans out. Toss into the pot and stir. Add whole vanilla bean in if wanted.
Add some hot mixture to egg yolks and mix together. Repeat until egg yolks are hot.
Pour yolks into the mixture and continue heating maintaining 170F while continuously stirring.
Once thick enough to coat the back of a spoon. Strain through a fine-mesh sieve and place bowl over an ice water bath.
Whisk in cold heavy cream. Let ice until completely cold.
In a large bowl filled with ice combined with rock salt, add a small bowl filled with ⅓ of the ice cream base and whisk continuously for 10 minutes or until thickened.
Let rest in a freezer for 10 minutes. Place back the ice bowl and whisk for another 10 minutes.
Waffle Method:
In a medium bowl, add and combine all-purpose flour, fine sea salt, and granulated sugar.
Separately whisk the egg whites until frothy before whisking in heavy cream, vanilla extract, and melted unsalted butter.
Whisk wet ingredients into the dry ingredients until combined.
Using a waffle cone waffle iron cook the batter to the waffle iron’s directions (45-60 seconds in the video).
Let cool completely.
Caramel Sauce Method:
For the caramel sauce, in a medium saucepan add in granulated sugar.
Set over medium-high heat let sit undisturbed.
Once the sugar has melted whisk in unsalted butter until completely combined.
Once combined, whisk in heavy cream.
Once combined, remove from heat and add in fine sea salt. Whisk until combined.
Let cool.
Assembly Method:
Place soft serve into a bowl along with chunks of the waffle cone and a drizzle of caramel sauce.
Vigorously stir before transferring to a piping bag.
Pipe into a cup of choice and serve with a drizzle of caramel sauce topped with waffle bits.
I just made this caramel sauce and it's amazing! I put it on ice cream tonight, but it's definitely going on my coffee tomorrow!!
Also can you sub the milk out for coconut milk?
