The easiest pancake recipe ever.
Serves: 2-4
Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients:
2 ripe bananas, broken into pieces
3 large eggs
½ -⅔ cup (75g) all-purpose flour
Pinch of salt
Method:
To a blender, add the bananas and eggs and blend on high. Then add the flour and salt. Blend on medium until combined. If the batter seems too thick you can add a bit of water. If the batter is too runny, add a bit more flour. Let the batter rest for 2-3 minutes.
Heat a large non-stick pan over medium heat. Once hot, use a 1/3rd cup measuring cup to pour batter for each pancake and cook until set, about 3-4 minutes. Flip and finish cooking on the other side for another 2-3 minutes. Serve and enjoy.
This was really good. Next time, I’ll add a bit more flour and lower my heat. If you add a bit of peanut butter and a dash of maple syrup, these are delicious 😊
Just tried this today. Batter was more wet than I was use to and the pancakes turned out quite flat. Despite this they tasted pretty good!
