Maybe the easiest steak recipe ever.
Serves: 2

Cook Time: 10 minutes
Ingredients:
1.5 lbs (680g) ribeye steak, thinly sliced against the grain, fat cap removed and finely chopped
½ yellow onion, thinly sliced
½ cup (60mL) shiro dashi
1 cup (120mL) water
Method:
Place the fat in a large sauté pan set over medium-low heat and cook until you have about 1-2 tablespoons of fat rendered out. Add the onion and increase the heat to medium-high and saute for 3-4 minutes until softened and just starting to brown. Add the shiro dashi and the water and increase the heat to medium-high and bring to a boil. Reduce the heat to medium-low and add in the thinly sliced steak, stirring to separate the pieces and cook through, about 2-3 minutes. Turn off the heat as soon as the steak is done. Taste for seasoning and add salt if needed. You can eat this as is or serve it as it’s meant to be, over rice and garnished with green onion.
