Burger's have always been known as commonly cheap food. That is no longer the case with gourmet burgers costing up to $15 or more! We can make a fancy burger with our own homemade buns for just $2.


SUPPLIES USED:


Serving Size: 4


INGREDIENTS:

Burger Buns:

  • 2.5 tsp instant yeast

  • ½ cup water

  • ½ cup milk

  • 3.5 cups bread flour

  • 1.5 tsp salt

  • 1 Tbsp granulated sugar

  • 3 Tbsp vegetable oil

  • 1 egg

  • 1 egg yolk


Sauce:

  • 1 Sweet Onion, diced

  • Vegetable Oil

  • Salt

  • 1 cup (240 g) Mayonnaise

  • 1/2 cup (125 g) Ketchup

  • 1/2 cup (125 g) Mustard

  • 1 Dill pickle, diced

  • Black pepper


Burger:

  • 1lb ground beef

  • Salt

  • Black Pepper

  • Cheddar cheese

  • American cheese


INSTRUCTIONS:

Bun Method:

  1. To make the buns, get a small container and add ½ cup of lukewarm milk and dissolve in 2 ½ teaspoons of instant yeast.

  2. In the bowl of a stand mixer, whisk together 3 ½ cups of bread flour, 1 tablespoon of granulated sugar, and 1 /12 teaspoons of fine sea salt. Place in your stand mixer with the dough hook attachment and begin mixing. Add in 3 tablespoons of vegetable oil followed by your milk mixture one egg yolk and one whole egg. Let that mix until you get a smooth dough.

  3. Pop it out of the bowl and shape it into a light bulb. Toss it into a greased bowl, cover with plastic wrap and let it rise for one hour. Simply punch it down, divide and shape it into six evenly sized balls.

  4. Place your dough balls onto a baking sheet, cover, and let it proof for 30 minutes. Finally, give them a light brush of egg wash and place in a 375-degree oven for 15 minutes.

  5. Pull them out and brush them with melted butter.

Sauce Method:

  1. Start by roughly dicing the onion.

  2. Heat a large pan over medium-high with enough vegetable oil to coat the pan.

  3. Add onions once the pan is hot and toss to coat with oil and sear until the onions develop color. Toss again and sear for another minute.

  4. Once translucent add salt to taste and set to the side.

  5. In a medium bowl, add in all ingredients and whisk to combine.

Burger Method:

  1. Add ground beef to a bowl and divide it into eight equal pieces.

  2. Cut a bun in half and toast each side in butter.

  3. Heat pan over medium-high. Once hot add on a burger ball and using the flat side of a spatula smash the burger patty.

  4. Season with salt and pepper. Sear for 2 minutes.

  5. Flip. Top with cheddar cheese and sear for 1 more minute. Broil or blow torch the cheese just until barely melted.

  6. On the bottom bun, add a generous spoonful of sauce and top with the first patty.

  7. Add another burger ball to the pan, and using the flat side of a spatula smash the burger patty.

  8. Season with salt and pepper. Sear for 2 minutes.

  9. Flip. Top with American cheese and sear for 1 more minute. Broil or blow torch the cheese just until barely melted.

  10. Add the second patty on top of the first patty.

  11. Top the second patty with another generous dollop of sauce and finally top with the top bun.

the recipe says 1 lb of ground beef, but he says 1.5 lbs in the video. Which is it?

Missing where the 1/2 cup of water goes for the buns. I assume by his video that it goes with the milk and yeast. I'll find out

Buns were double or triple the size of my patties. Definitely make 8 buns, as the video says, out of your dough instead of 6, which the recipe says.
